Vanilla Christmas Cookies

Ingredients:

Vanilla extract – 1 tsp
Egg yolk – 1
Butter – 250 gm
Flour – 375 gm
Icing Sugar – 200 gm
Food colouring – for decorating (optional)
Gold and silver edible balls – for decorational purposes

Method:

Put the vanilla extract, the icing sugar, the butter and the egg yolk all together inside a bowl and use a wooden spoon to stir it around. After this you need to add the flour and then mix it o that a dough is formed which is firm enough. Make the dough into two disk shapes and then place clingfilm on it.

Let this chill in the fridge for around 30 minutes and you need to heat up the over to 190 Celsius and place two sheets of baking paper. Roll the rough out and then use a cookie cutter to cut your shapes out. Using a skewer make a little hole on each cookie and bake it for around 12 minutes.

You should let these hot cookies cool on a wire rack and then continue with the icing. You need to mix cold water and the icing sugar together so that the icing isn’t too thick and isn’t too runny either. Place this icing over the cookies and then the edible balls on top.

Cookies Filled with Jam

Ingredients:

Flour – 5 cups
Sugar – 1 cup
Butter – 2 cups
Egg yolks – 4 large
Eggs – 2 large
Vanilla extract – 1 tbsp
Jam – Β½ cup

Method:

Heat the oven up to 350 Celsius. The flour and the sugar should be stirred together in a bowl. Then cut the butter inside the mixture. As pastry blender will help you to do this. Then add 1 egg, egg yolk and vanilla and keep stirring.
Roll the dough on a surface which is floured lightly. The thickness should be around 1/8 inches. Make sure that you have a cookie cutter which is around 2 to 3 inches round. Put 1 tbsp of jam inside each of the cookies and then pinch it to close it up.

Place this carefully on a baking sheet which is slightly greased. Beat the egg which is still there and brush this beaten egg over the cookies. The cookies will take around 9 minutes when it comes to baking them, till get start getting slightly golden brown. You then need to cool this off by placing it on a rack for some time.
